
First, go in your backyard and pick four good sized mirlitons. Grab the other ingredients at the store. If you don't have any mirlitons in your backyard, you'll have to just buy them. 
Recipe below is from Greg Beron.
4 good-sized mirlitons, cut in half lengthwise
1 tablespoon butter, plus extra for greasing the pan
1/2 pound shrimp, chopped
1/2 pound smoked ham, chopped
3/4 teaspoon salt
4 cloves garlic, chopped fine
1-1/2 teaspoons paprika
1 large pinch each oregano, thyme, cayenne pepper and freshly ground black pepper
1/2 cup evaporated milk
1/2 cup green onions (scallions), chopped
1/2 cup yellow onion, chopped fine
About 1 cup bread crumbs
1 cup shrimp stock, fish stock, or plain water
In a large pot, boil the mirlitons in water to cover for 1/2 hour, or until soft. Drain the water and set them aside to cool. While they're cooling, heat your oven to 350̊F and grease a 8 inch square baking dish with butter.
When the mirlitons have cooled, scoop out the seeds carefully and discard them. Then scoop out the "meat", leaving about 1/4" all around. Chop the "meat" and put it in a bowl, setting the mirliton shells aside.
Melt the butter in a large skillet over medium heat. Add the shrimp, ham, garlic and seasonings. Cook for 5 minutes, stirring frequently. Add the mirliton "meat", milk, onion, green onion, and 1/2 cup of the bread crumbs. Cook for 5 more minutes, stirring well. Remove the skillet from the heat and spoon the mixture into the mirliton shells. Top each of the filled shells with about 1 tablespoon of the bread crumbs.
Put the mirlitons in the baking dish and carefully pour the stock into the dish around them.
Bake, uncovered for 1/2 an hour. Eat and enjoy.
PS - This looks pretty much like every stuffed mirliton dish I have ever eaten. Therefore, have a backup plan (Burger Doodle) in case you or your spouse eats a little and says, "So what?". If it comes out good, we’re bringing some to the hospital tonight.



Man, that sounds good! Remember Loretta's (Aunt Myrt's maid) stuffed mirliton? I remember her's being so good! I'd love for you to freeze me one and let me eat it at Thanksgiving . . .
I don't remember Loretta's stuffed mirlitons. I remember her being a great cook but that's about it. I hadn't thought about Loretta in years.
And we should have plenty by Thanksgiving.
OK, I admit it. I was wrong. I will be able to eat some of this. Patsy gave me a taste of the stuffing before it went into the oven. It is quite delicious.
I love the picture! Patsy is an excellant cook, so I imagine she can make anything appetizing! I happen to like Mirliton's. I always pronounced it 'Melliton'. I happen to hear you pronounce the R in the name, Robbie. Ask Patsy which is correct. Just curious.
Mirliton: I say mirl-i-ton with an R. Patsy says mell-a-ton with a silent R. Sue says mell-y-ton. Of course, my pronunciation is correct. The picture was taken on our stove top. The end result was very good. We gave one to Mom and one to Christina last night.
OK, next time, we'll buy shrimp and peel them ourselves so we know, for sure, they're all peeled completely.

What is a mirliton?????
They're those green things in the picture. They're in the squash family but they're also known as cooking pears. Patsy cooked some yesterday afternoon but we used frozen shrimp. She discovered this morning that some, but not many, of the shrimp were not completely peeled. That bothers me more than most seafood eaters.
I am sorry to say that I did not get to taste the mirliton. I didn't eat last night as I did not get home until late and then today for lunch mom & I ate the leftover beans & rice I had brought so they wouldn't go to waste. I suspect Mama is doing a little feast dance since I forgot to take my mirliton with me.
I just got home a little while ago. The boys fell asleep on the ride home so it was an easy drive. We went to the St. Edward's fair again tonight. I always enjoy that fair. I love the band that plays on Sunday and I also love to run into old friends.
I left mine in the fridge a little too long and Patsy ate half of it. My half was delicious, however. You have old friends at St Edwards?
Yes, I have friends who attend the St. Edward's fair every year. Some of them went to St. Edward's but most just go to the fair every year. It's a pretty good fair.
