Spring Break

Today is the first day of my Spring Break. I woke up at 5:15 because Bunk asked me to drive him to take the SAT. It was being given at a school 18 miles from here and he did not trust himself to find the school. I didn't trust him either. Two days ago he told me he had to be there at 7:00. This morning when I was serving him breakfast at 5:45, he told me he didn't have to be there until 7:45. SInce I was already up, he was going to get there early! He told me to pick him up at 12:15. I should have known better. He didn't get out until 1:00.

I made chicken salad today - enough to share with Stephen, Kellie and Brianne my labor of love. Brianne and Greg had some on a croisant before she left to go back to school.

Patrick, Scott and I are heading to the lake until Tuesday night. The weather is supposed to be nice. We are going to go hiking tomorrow at Panther Creek. I've been there once before and it is very pretty. There's a beautiful waterfall 3.5 miles up the trail. Scott frequently goes there to fish.

I have lots of things on my "to do" list to keep me busy when I get back from the lake. I am mostly just looking forward to time off of work.

I think that's the waterfall that Joey and I visited last year after Stephen's wedding. It was beautiful! Enjoy your time off with your "micro-family". Wish I had some of your chicken salad on croissant!

Sue -- Do you alter the recipe for Earline's Chicken Salad at all? I'm not sure if you can get Blue Plate or not. I always go out and buy a regular size jar of BP, even though that's not my favorite, because I wouldn't want to take a chance of changing the flavor by using Hellman's. I don't suppose it would, but you never know! When we were working together, Earline used to bring me a plate of leftover (from Saturday's wedding that she catered) sandwiches Monday morning and I thought I had never tasted anything so good. I wonder what she'd think about the hit it's made in Georgia?

What is the recipe?

How fun! Chicken salad and a spring break. I made that chicken salad last year for the first time in a long time. It is laborious and I don't eat chicken, so my people who loved it so much need to mooch off the next makers of it.

Georgia is so pretty in the spring with peach blossoms all over. Do they smell good like orange blossoms do?

p.s. I hope Bunk did well on the SAT's.

The chicken salad recipe is from Mama's friend, Miss Earline, who had a side job of catering. This was a recipe she developed for the sandwiches. The recipe card that I have is dated 4/10/81 so I guess that is when I requested it from Mama. I cannot imagine Miss Earline making that recipe on a regular basis. It is a PAIN to make! Brianne made it for the first time last summer. She told me she would completely understand if I never made it again.

Chicken Salad

2 whole chickens, remove skin
3 large onions, sliced
1 whole stalk celery, mince very fine, drain in collander until dry
Pepper (plenty)

Place chicken in water in heavy pot with lid. Bring water to boil, simmer till chicken is tender and falling off bones. Remove chicken from pot, set aside till cool. Add sliced onions to water and cook until water is down to about one inch. While onions are cooking, remove chicken from bones. No need to chop the meat. Add chicken to onion-water and cook until water is COMPLETELY gone. At this point, stirring is important to avoid burning on the bottom. Combine this meat-onion mixture with the minced celery. Add Blue Plate Mayonnaise till the consistency is right for spreading. Add pepper to taste. Delicious.

And don't forget, she wasn't working with two chickens, she was working with 20 or more at a time. She had to really study the problem to come up with the recipe for a family kitchen.

Scott and I love that chicken salad and would love some. I agree it is the biggest pain to make. I wish someone would find a better way. I have eaten chicken salad in lots of restaurants and Ms. Earline's is still the best.

It doesn't sound all that difficult to make, just time consuming. Am I right? I'm not willing to attempt it, at least not before summer! So go ahead, Fleetfoot & make us some.
